A vanguard winemaker with immense potential, Étienne Fort embodies the progressive horizon of effervescent wines in Limoux. The days of supplying grapes to the local cooperative are long gone. With a 11-hectare yield now exclusively reflecting his artistry, Chardonnay, Chenin, and Pinot Noir synergize splendidly in the Brut Nature, exuding a level of tension and aromatic distinction that surpasses the appellation's norm.
Étienne's decision to craft his inaugural estate-bottled Crémant and Blanquette de Limoux in 2013 was inspired by the artistry of renowned champagne creator Anselme Selosse. Every facet of cultivation respects the inherent excellence of the terroir, with manual harvesting constituting the norm.
While Étienne's father leaned towards christening the domaine as Château St Salvadou, Étienne opted for a simpler moniker, Monsieur S, as the ultimate homage.
The Blanquette cuvée matures for 12 months 'sur lattes' before unveiling its splendor, while the Crémant undergoes a 24-month lees aging, emulating the meticulous practices of elite Champagne producers. These wines abstain from dosage, rendering them dry, invigorating, saline, and authentically reflective of their regional essence.

Over a span of 30 years, Claude Serra has amassed diverse experiences, affording him a sweeping perspective across the wine industry, from soil to glass. This breadth underpins his consulting approach, characterized by its global yet precise nature. Through his venture, "Vins et Origines," Claude curates blends sourced from the crisp, high-altitude terroirs of Limoux, in close partnership with like-minded vintners.
Claude assumes the technical mantle, overseeing vineyard management, pruning, selective harvesting, and pinpointing harvest timings for distinct parcels. He then steers the vinification and aging processes, opting for natural techniques with minimal yeast and sulfite intervention, favoring lengthy maceration. Following this, he finesses the blends, ensuring each wine faithfully echoes its origins and terroir traits. Lastly, Claude supervises the bottling phase, safeguarding the qualitative groundwork laid throughout the process.

Jean-Marie Rimbert, a steadfast advocate for the indigenous Carignan grape of Languedoc, stands as a prominent cultivator in the region, distinguished by his unorthodox approach. He proudly proclaims himself a "Carignaniste" and a "Carignator," championing and safeguarding the Carignan variety. Through his meticulously crafted cuvées, he beautifully showcases the remarkable potential of this oft-misunderstood grape when cultivated on suitable soils with mindful farming and vinification practices. He aptly likens his affinity for Carignan to the reverence many hold for Pinot.
Characterized by his restrained yields (typically capped at 30hl/ha, often even lower), profound familiarity with his individual plots, and gentle extraction methods, such as delicate punchdowns, Jean-Marie coaxes out the grape's inherent subtlety, nuances, elegance, and capacity for graceful aging.

The Foulaquier estate is nestled in the esteemed Pic Saint-Loup region, where it enjoys a temperate climate and a southwest-facing hillside with limestone debris. The estate was founded in 1998 by Pierre Jequier, a former architect, and Blandine Chauchat, formerly in parliamentary service. These passionate vintners have revitalized the ancient estate, embracing biodynamic practices since 2006.
They hand-select grapes in 20 kg crates to ensure that only the best fruit is used to make their wines. They also use gravity-based processes and avoid pumping and additives, which helps to preserve the purest grape expression.
The grapes are macerated for an extended period, which helps to refine the tannins. The wines are then aged in accordance with biodynamic principles, which further enhances their complexity. Bottling is also done by gravity, which helps to preserve the wine's delicate character. Since 2016, the estate has also been aging some of its wines in large sandstone amphorae, which gives them a unique flavor profile.

Following a conventional academic path and a stint as a printer, Olivier's journey takes a transformative turn when, at the age of 40, he inherits his ancestor's vineyards. Fueled by an innate connection to nature, he takes a bold step towards embracing fundamental values and assumes the mantle of an artisan-vintner.
Guiding him on this newfound path is Jean-Philippe Padié, a seasoned Burgundian whose wisdom is juxtaposed against his current Pyrenean backdrop. Trust, mastery, and clarity, as per Padié's sage counsel, become the keystones in crafting these wines. Embracing organic viticulture, hand-harvesting, employing trace amounts of sulfur akin to homeopathy, and relying solely on indigenous yeasts for fermentation, all while harmonizing with the lunar rhythms governing both vineyard and cellar – these practices manifest as intuitive choices for Olivier. The fruits of his inaugural vintage in 2015 cement this conviction.

A fusion of idealism and daydreaming for some, paired with perfectionism and unwavering determination for others, Matthieu TORQUEBIAU is fundamentally a passionate soul, a devotee of nature's magnificence.
In the year 2004, as he breathed life into Domaine l'Hermas, his focus was fixed on a specific terroir. His exploration led him to discover elevated garrigue terrains, encircling the ancestral estate. The unearthing of this "Hermas" (forgotten land in the Occitan language) marked the commencement of his journey. With patience, he cleared the land, methodically crushed the stone blocks forming the soil, and lovingly sowed the seeds of syrah and Mourvèdre.
In the world of organic farming, using chemicals to eliminate weeds is not allowed, and the rocky terrain makes it challenging to use mechanical equipment. As a result, he admits with a hint of humor, "So, I've opted for a pickaxe as my tool of preference."
Today, Matthieu orchestrates two expressions: l'Hermas Blanc and l'Hermas Rouge. These cuvées now grace the wine lists of France's most esteemed establishments, an endorsement of their exceptional character and quality.

The Domain finds its home in the charming municipality of Magalas, a village nestled 15 km to the north of Béziers. Rooted in a lineage of esteemed winemakers, its story is one of familial dedication.
At the heart of this narrative is Bruno Granier, an ardent viticulturist who pursued his passion through studies in viticulture and oenology in Montpellier. His journey led him to contribute to the family estate until 1999 – a pivotal year marking the inception of his own winery.
Encompassing a generous expanse of 22 hectares, this Domain embraces a diverse tapestry of varietals. These include venerable Old Carignan vines that have thrived for over 80 years, alongside Grenache, Syrah, Muscat, Viognier, Cinsault, Cabernet Sauvignon, and Roussanne. Situated at the southern cusp of the Faugères appellation, Granier's estate is ideally positioned to harness the essence of its terroir. Vinification: No destemming for Syrah, Cinsault, and Grenache. However, destemming for Mourvèdre. Two-grape fermentation for Cinsault and Grenache, gentle manual punching down, manual pressing using a Marmonier press dating back to 1911.
Aging: On fine lees with 23 months of aging, exclusively in barrels (no tanks) of three sizes (228 liters / 330 liters / 700 liters). The white wine is aged for 9 months on fine lees in French and Austrian oak casks.
Production: Langlade red - 9000 bottles and Langlade white - 1000 bottles.
Embarking on a journey that stretches from 936 to the present day, Langlade Winery's wines have ventured through a tapestry of changing era. During the splendid time of the Sun King, Louis XIV, Langlade got its coat of arms as a symbol of honor. This special wine was even enjoyed by President Thomas Jefferson when he visited Nimes in the 18th century.
But history has its scars – World War II affected the vineyards. The wine production had to adapt, with grapes finding shelter in a cooperative cellar. In 1999, an important moment came for this small vineyard. Rémi Pédréno, from Roc d'Anglade, started the first vintage, guided by Elisabeth Van der Bent, the current caretaker and producer.
In the old cellars, built by skilled artisans, a beautiful transformation happened. Under Rémi's guidance, Elisabeth revived the family legacy in 2001, naming it after herself. Deeply connected to this land for centuries, the DUFÈS family sees wine as a shared human journey, evident in every bottle. The soil, tended to with care, infuses the grape's essence into the wine, creating a natural masterpiece.

Through their encounters and the opportunities forged with fellow winemakers, Julien and Alexandre of Les inVINcibles curate exceptional, genuine blends. It's a concept born of audacity, an idea embraced with fervor, a longing they capture in every bottle when the atmosphere resonates perfectly.
This second iteration of "Griffe" materializes in a limited batch of 2400 bottles, a collaboration with winemaker Cyriaque Rozier hailing from Pic Saint Loup. The infusion of Counoise grapes sourced from the estate's entrance plot intertwines with Œillades harvested from twenty-year-old massal selection vines. These vines thrive under animal-powered cultivation techniques, undergo fermentation with indigenous yeasts, and mature for an average of 6 months. The final touch includes a subtle addition of homeopathic sulfur before bottling.
The objective is to create a wine that can be enjoyed throughout the year, with a slight tannic presence introduced by the Counoise grape but counterbalanced by the drinkability of the Œillade variety.The composition stands at 75% Counoise and 25% Œillade, both nurtured in the characteristic gravette soil of Pic St Loup.
This creation proudly bears the Demeter certification, a testament to its organic origins and quality.

In 2004, his son Mickael joined him, becoming the steward of this sprawling 40-hectare domain. The bedrock of their heritage lies in the venerable vines nestled within the exquisite terroirs of Estagel, Maury, and Tautavel, predominantly rooted in schist and micaschist soils.
Across their portfolio, a harmonious equilibrium prevails. When the topic shifts to terroir-infused wines in the captivating expanse of Languedoc, one name unfailingly takes the spotlight: Clos des Boutes! Tucked between the storied locales of Nimes and Arles, in the picturesque enclave of Bellegarde within the Gard region, Clos des Boutes emerges as a luminary in the world of winemaking. Its origin can be traced to the year 2003 when Sylvain Boutée, a talented and ambitious winemaker hailing from the northern fringes of the country, set the wheels in motion.
Over the roughly 14 hectares that the estate encompasses, Sylvain Boutée dedicates himself to enhancing the splendid terroir upon which he has established himself.
Aware that crafting a good wine begins first and foremost in the vineyard, Sylvain manages his vineyard through organic farming, placing the focus on tending to the plant material and respecting the surrounding biodiversity. Here, the vines and soils are tended in the most natural way possible, with exclusively manual harvesting, and the winemaking process occurs without any chemical additives, relying solely on indigenous yeasts.
