Cordero San Giorgio Winery is a hidden gem tucked away in the picturesque foothills between the Apennines and the majestic river Po. A family-owned business that embodies passion, dedication, and hard work, it was founded by siblings Francesco, Lorenzo, and Caterina Cordero in 2019. The winery represents the fruition of a lifelong dream for the Cordero family, who were raised amidst the vines and the rich winemaking traditions of their historical family winery in Castiglione Falletto, Barolo.

 

Keeping some vineyards in Castiglione Tinella in Langhe, the Cordero siblings set their sights in 2019 on the ancient estate of Tenuta San Giorgio, located in the Oltrepò Pavese region. Boasting 22 hectares of land, 20 of which are dedicated to lush vineyards planted at elevations between 200m-250m, plus 17.5 ha rented, the estate core foccus is Pinot Nero but also offers a diverse array of varietals, including Pinot Grigio, Chardonnay, Croatina, Barbera, and Moscato d'Asti all of which thrive in the estate's ideal soil conditions. Cultivated according to organic principles since July 2019, the vineyards have officially been certified with the 2022 harvest. The estate also features a centuries-old oak forest, which plays a crucial role in preserving the land and ecosystem.

 

The wines of Cordero San Giorgio Winery pay homage to the legend of St. George and the dragon, evoking the spirit of curiosity, the challenge of the unknown, and the triumph of discovery and knowledge - experiences that mirror the journey of the Cordero siblings. Each sip of their wine is a celebration of their passion, dedication and hard work, and a reflection of the unique terroir of the Oltrepò Pavese region.

CORDERO SAN GIORGIO 'KATARI' PINOT GRIGIO

 

Varietal: 100% Pinot Grigio

Appellation: Oltrepò Pavese DOC

Harvest: By hand in small baskets.

Winemaking: The grapes are softly pressed before the alcoholic fermentation which occurs in stainless steel tanks at a controlled temperature.

Aging: The wine does not undergo malolactic fermentation. It is held on the lees in stainless steel tanks for about 6 months until just prior to bottling, and then it rests for at least 2 months before release.

 

Notes:  Pale straw yellow color with green hues, on the nose, it is fresh floral with fruity aromas of pear, apple, and jasmine. A dry, medium-bodied white wine, with marked crispy acidity. On the palate, it is fresh, well balanced, with a pleasant lingering finish.

CORDERO SAN GIORGIO 'RIVONE' CHARDONNAY

 

Appellation: Oltrepò Pavese DOC

Varietal: 100% Chardonnay

Age of vines: 30 years

Training system: Guyot

Vineyard location: Santa Giuletta in Oltrepò Pavese

Soil: Clay

Harvest: By hand in small baskets.

 

Winemaking: After a soft pressing of the whole grapes, not de-stemmed, the must is left to decant in thermo-controlled steel tanks. A few days later, it is decanted and subdivided among terracotta amphorae and French oak barriques, where the alcoholic fermentation, lasting about 4 weeks, occurs. The malolactic fermentation is carried out only in part.

Aging: The wine is held for about 12 months sur lies among amphorae and barriques, during which frequent bâtonnages are done. After bottling, the wine rests for about 6 months before release.

 

Notes: Intense straw yellow color. On the nose, it opens on a large and complex bouquet in which ripe peaches, orange blossom, vanilla, flint, and eucalyptus honey can be recognized. On the palate, acidity and minerality give a delicate flavor that turns to sapidity. These characteristics are sustained with a long persistence presaging an excellent aging potential.

CORDERO SAN GIORGIO 'PIASA' ROSATO

 

Appellation: Provincia di Pavia IGT

Varietal: 100% Croatina

Age of vines: 30 years

Winemaking: The grapes are softly pressed before the alcoholic fermentation which occurs in stainless steel tanks at a controlled temperature.

Notes: Intense and bright cherry pink colour. On the nose, it opens with a markedly fruity bouquet, where the aromas of small berries, such as raspberry and wild strawberry, are complemented by fresh floral aromas of violet and rose. Fruity palate, well balanced by fresh acidity and a pleasant sapidity, revealing a rich and fragrant full-bodied wine with a lingering finish.

CORDERO SAN GIORGIO 'RAMÉ' Pinot Grigio

 

Appellation: Oltrepò Pavese DOC

Varietal: 100% Pinot Grigio

Age of vines: 30 years

Training system: Spurred Cordon

Vineyard location: Santa Giuletta in Oltrepò Pavese

Soil: Clay

Harvest: By hand in small baskets.

Winemaking: After de-stemming, a short maceration using inert gas in the press is done, and then a soft pressing. Fermentation occurs at a low controlled temperature in stainless steel tanks.
Aging: Once the alcoholic fermentation is complete, about 20/30% of the mass is aged in second passage barriques for approximately 6 months during which frequent batonnages are done. The rest of the mass is held on the lees in stainless steel tanks for about 6 months until just prior to bottling, and then it rests for at least 2 months before release.

Notes: Intense and luminous coppery color. The nose opens in a range of fruity and floral notes with hints of apple, pear, apricot, and acacia flowers, with a slightly sweet, almost honeyed finish. The palate is as sweet and soft as the nose. A light-bodied and elegant wine, with a round sip and a lingering finish, and a very light tannic final aftertaste.

CORDERO SAN GIORGIO 'Exergia' Moscato d'Asti

 

Appellation: Moscato d’Asti DOCG

Varietal: 100% Moscato Bianco

Vineyard: The vineyards are located in San Giorgio di Castiglione Tinella , in Langhe area (Piedmont), and are characterized by mainly calcareous soil with sandy veins.

Age of vines: About 40 years: the oldest was planted in the 50s and the youngest in 2012.
Winemaking: After a selection of the best grapes, a soft pressing is carried out to preserve the most aromatic part, followed by natural cold settling. The must is stored in stainless steel tanks at a temperature of -3 °C. The alcoholic fermentation takes place in an autoclave and, upon reaching about 5% vol., it interrupted by rapid refrigeration. In order to preserve its fragrant aromaticity and freshness, the Moscato does not undergo malolactic fermentation and, after sterile filtration, it is cold bottled.

 

Notes: Brilliant straw yellow color and fine perlage. The nose is intense and aromatic, opening with a delicate bouquet in which hints of acacia flowers, peach and a musky aroma can be recognized. On the palate it is sweet, elegant and fresh thanks to its good acidity. Lingering finish of ginger and summer fruits.

CORDERO SAN GIORGIO 'TIAMAT' PINOT NERO

 

Appellation: Pinot Nero dell’Oltrepò Pavese DOC

Varietal: 100% Pinot Nero

Age of vines: 30 years

Training system: Guyot

Vineyard location: Santa Giuletta in Oltrepò Pavese

Soil: Clay

Harvest: By hand in small baskets.

Winemaking: The winery’s vineyard area extends for about 20 hectares subdivided into small plots. The parcels of Pinot Noir are harvested and vinified separately, following different processes in order to enhance the characteristics of the terroir. The grapes are de-stemmed, but not pressed to keep the grape intact and on about 10 to 15% of the mass is processed with whole-cluster vinification. Cold pre-fermentative maceration is done before the alcoholic fermentation which occurs in stainless steel tanks at a controlled temperature with short pumping overs daily. At the end of the fermentation, the wine is racked, and the malolactic fermentation is done in steel tanks.

Aging: The wine is held about 6 months in stainless steel tanks until close to bottling, and then it rests for at least 2 months before release.

 

Notes: Clear and luminous ruby red colour. Fruity aromas, especially small red fruits, along with notes of undergrowth and a slight spiciness characterize the nose. Fresh with light sapidity, and pleasant soft tannins on the palate.

CORDERO SAN GIORGIO 'FREDO' BARBERA RISERVA

 

Appellation: Oltrepò Pavese DOC

Varietal: 100% Barbera

Age of vines: 40 years

Training system: Guyot

Vineyard location: Santa Giuletta in Oltrepò Pavese

Soil: Clay

Harvest: By hand in small baskets.

 

Winemaking: Cold pre-fermentative maceration is followed by alcoholic fermentation in thermo-controlled steel tanks for about two weeks during which frequent remontages and délestages are performed. This is followed by post-fermentative maceration on the skins and, after pressing, the wine is transferred to barrels where malolactic fermentation takes place.

Aging: About 10 months in French oak barrels and another 10 months in large oak cask. A bottle aging of about 6 months follows before beeing released to the public.

 

Notes: Intense ruby red color. On the nose, it expresses intense aromas of ripe fruit, including cherry, blackberry and plum, with a floral hint of violet and a delicate spice. On the palate, it is structured and complex, with a persistent finish and balanced by fresh acidity.

Appellation: Pinot Nero dell’Oltrepò Pavese DOC Riserva

Varietal: 100% Pinot Nero

Age of vines: 30 years

Training system: Guyot

Vineyard location: Santa Giuletta in Oltrepò Pavese

Soil: Clay

Harvest: By hand in small baskets.

Winemaking: The vineyard covers about 20 hectares, divided into small plots. The Pinot Noir plots are harvested and vinified separately. The grapes are destemmed, but not crushed to keep the berries whole. Cold pre-fermentative maceration is followed by fermentation in stainless steel tanks at controlled temperatures. Short daily remontages. Once fermentation is completed, the wine is pressed and malolactic fermentation takes place in barrels.

Aging: After about 12 months in barriques, only the best plots are selected and blended. After bottling, further aging in bottle takes place for about 1 year.

 

Notes: Red cherry and baked strawberry aromas, smoky and herbal. Medium body, with velvety tannins. Juicy with some notes of nutmeg and vanilla. Balanced and transparent.
